Typical vegetables used in the sabzi include carrots, potatoes, cauliflower, peas, eggplant, corn, beans coriander. Indian spices such as cumin, coriander, garlic, ginger, aniseed, cardamom and garam masala are also used to enhance the flavor and aroma of the dish.
